When we decided to make a sparkling wine, we wanted to produce something different.  There are many great English sparkling wines but we believe there is a need for diversity in the sector.

When we started, all English sparkling wines were made using the traditional method of production as they do in Champagne.  This gives the wine a typically deep, biscuity, dry taste that comes from aging on lees (yeast).

Whilst that style of wine suits some people’s tastes, we appreciate it is not for everyone or perhaps even an everyday style of wine.

We use a different method to produce Fitz in order to give the wine a fresher, more approachable, fruit driven style. The intention is to offer an easy-drinking wine to be enjoyed for all occasions.
